SPAGHETTI & GREEK KEFTEDES (MEATBALL) CUPCAKES

Ingredients

Keftedes

1 Cup Breadcrumbs

3 Tablespoons Milk

3 Cloves Garlic, pressed

1 Medium Onion, chopped

3-4 tablespoons Oregano

1 Teaspoon Sea Salt

¼ Teaspoon Ground Pepper

l Pound Ground Lamb (or Beef)

2 Eggs

½ Cup Flour

⅓ Cup Olive Oil, for frying

Spaghetti & Toppings

1 Packet of Spaghetti

½ - 1 Cup of Parmesan

2 Eggs

¼ Parmesan cheese to sprinkle

½ Marinara Sauce

Cupcake Tin and Mixing bowl.

So you may be thinking, Cupcakes.... Spaghetti... and Meatballs are you on Crack?

Buttttt my wonderful friends I am here to show you that this wonderful combination can be made into pop in your mouth size with none of the spaghetti meatball mess!

So lets rollllll right into it (See what I did there)...

Preheat oven to 350 degrees.

Starting out with the Keftedes mixture, throw your breadcrumbs and milk into a mixing bowl.

Then pop your garlic, onion, seat salt, pepper and oregano into your Ninja (blender) and hi-ci-ya that mixture till its blended and the onion is finely chopped.

Add your onion mixture to your milk and breadcrumbs.

Throw in your meat and add your eggs, (remember when I said no-mess, well maybe I was lying.... a little) get your hands all up in that mixture and mix everything together until you make one giant ball (mmmm yum).

Roll meat mixture into tiny balls.

Place flour on a plate big enough to roll your balls around... to coat the entire meatball --- roll each ball around, shake off the excess and place on a tray ready to get fried.

Heat a deep enough frying pan with olive oil over a Med-High heat.

Add the Keftedes and for around 7 minutes, turning every few mins until the outside is nice and brown and the inside is no longer pink.

Remove from oil and let them sit on a paper towel to soak up the excess oil.

Onto the Spaghetti... Bring a large pan of water to the boil add a sprinkle of salt and add you packet of spaghetti. Boil for 11 mins stirring frequently.

Once al-denti drain the spaghetti pop it into another mixing bowl and add eggs and parmesan and toss!

Time to put it all together...

Grab your cupcake tin and fill up the bottoms of each tin with your spaghetti mixture.

Pop your keftedes on top and add a dollop of marinara sauce to each meatball and a sprinkle of parmesan cheese.

Bake @ 350 degrees for 20 mins in le oven.

Pop them out of the tray and onto a serving plate and et voila Greek inspired Spaghetti and Keftedes Cupcakes.

This mixture will make up to 24 cupcakes. :)
