VEGGIE POKE BOWLS WITH FRIENDS

My best friend Ana (Ana Free) made me this Veggie Poke Bowl a while back and I can whole heartedly, honestly say it's one of the best things that have ever crossed my lips. It's super easy and fun to make and put together, so I got her to show me how and we did it together for you guys so you can make it too!

 

This is a really fun girls night in interactive dinner, I don't know about you but the more interactive my food experience is the better the food tastes... Is that just me?! 

 

 

So for this recipe you will need... (Scroll through the pictures for ingredients.) 

 

 

 

1. Chop all your ingredients up in to small pieces and add your Sushi Rice to the rice cooker or on the stove with around a cup to 2 cups of water depending on how much rice you want.  "The best way to know if you have enough water is to stick your hand in the pan/rice cooker and the water should come just up to your knuckles above the rice" say's Mumma Ana - p.s if you haven't got a rice cooker you should get one, it will change your life, I will link my fave one at the end of this post. Stir-fry the Shiitake Mushrooms with a little Sesame oil and let them wilt down a little but not become soggy, you want to keep the fullness in the texture to replace your fish. 

 

 

 

 

2. In a bowl mix together your Red Cabbage with your Mayonnaise and a drop of Ponzu and Sesame oil and some Sesame seeds to taste, then lay out all your ingredients on the table ready to plate. 

 

 

 

 

 

 

3. Now comes the fun part! It's time to put together your dish, so once everything is laid out on the table it's a free for all of what you want to add to your Veggie Poke Bowl, but this is how Mama Ana does it and it's the best so here we go... 

 

Plate your Rice in a bowl, add your Cabbage as a base, and then sprinkle in some Grated Carrots on the side, add your chopped Green Onions, Sliced Avocado, Edamame beans and finally your yummy Stir-fryed Shiitake Mushrooms. Add a sprig of Coriander and you are ready to devour. 

 

 

I personally have an addiction to this Creamy Sesame Sauce so I usually add that on top (I will link below), some Soy Sauce mix it all up and BAM Donezo. Happy London.
